Jeff Volek presents some interesting insights into how a low carb diet improves health. His primary focus is on athletic performance of runners, though his discussion is more about the science of low carb dieting. A runner on a low carb diet won a particular 100 mile race in 2012 and 2013, setting a record in 2012. 2013 was too hot to run well. He said the runner looked fine at the end. For long distance runners on a low carb diet there is less need to eat during the run, though they do need about 100 calories of carbs per hour to support brain function (according to one article I read). Eating less means less energy used for digestion and more available for running. Im not going to run, but the diet really works well for losing weight and controlling type 2 diabetes. Atkins was lampooned by many well-educated people, but it looks like research is now explaining why his diet works. Note that Atkins did not advocate a meat-only diet. He emphasized eating lots of low carb veggies.
