Jollof Rice Ingredients 2 cups long grain parboiled rice 1 kg chicken- thigh and breast pieces 1large onion 4Tomatoes 1inch piece ginger 1Habanero pepper 2 whole paprika 4 chicken knorr cubes 1 tbsp thyme Cooking oil & salt to taste Method 1. Parboil Rice and keep aside 2. Sauté the chicken pieces till golden brown and keep aside 3. Blend together onions tomatoes ginger habanero & paprika in a mixer 4. In a deep cooking pan put oil and fry the onion tomato mixture until oil comes out. 5. Add the knorr cubes , thyme and the chicken pieces and a cup of water used to wash the tomato mix off the blender 6. Bring to the boil till the chicken piece are well mixed with the tomato. 7. Add the parboiled rice , cover and let it cook on very slow heat until the rice is done and all the water is dried up. 8. Serve jollof rice hot
