Joni Farmer Bowen Shirley Nelson, my recipe for Chicken Marsala: 1/4 cup flour, 1/2 tsp salt, 1/2 tsp dried oregano, 1/4 tsp ground black pepper, 4 tbs butter, 4 skinless, boneless chicken breast halves, pounded 1/4" thick, 4 tbs olive oil, 2 cups sliced mushrooms, 1/2 cup Marsala wine, 1/3 cup cooking sherry. In shallow dish or bowl, mix together flour, salt, oregano, and pepper. Coat chicken pieces in flour mixture. 2. In large skillet, melt butter in oil over med heat. Place chicken in the pan and lightly brown. Turn over chicken pieces and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until chicken is no longer pink and juices run clear. This recipe is quick and delish. about an hour ago · Edited · Like · 1
