Just a bit of info on how a chicken lays an egg. Each chicken has a pineal gland behind their eye. Once they see daylight this gland sets of the egg production. It can take between 24-30 hrs to create an egg ready for laying depending on the chicken. As they get older this time also increases (this is why commercial hens are replaced at 18mths old). A chicken will never lay an egg at night and will wait until the next day. Once the egg is layed they then have a rest until the next morning when the pineal gland reacts and sets of another cycle. This means that the chickens naturally lay less in the winter and give themselves a break for their bodies to recover. In a commercial setting they have artifical lights to trick the hens and keep them laying as much as they can with no break. Our chickens do not have artifical lighting and are allowed to lay naturally giving them a break. Yes this means there will be fewer eggs and people may have to wait, but the above is the reason why. Appologies for this, but when the days become longer they will start to lay more and more as thats what chickens do best :) x
