Just found this post...It looks wonderful, and I could have a slice right now!! BOLO DE BOLACHA / MARIA BISCUIT CAKE 1 Package of Maria Biscuits 2 sticks of butter, softened 1 cup of brown sugar 1 cup of strong coffee, cooled 1 egg Cut the softened butter in squares. (Allow the butter to soften at room temperature. Do not melt in the microwave). Place the butter in a mixing bowl and add the sugar. With a wooden spoon, blend the butter and sugar together so that the butter softens a little more. Place in a mixer, add the egg and 5 tablespoons of coffee. Beat until the ingredients are well blended. One by one, soak the Maria biscuits in the remaining coffee. Be careful not to soak for too long as they tend to fall apart if they absorb too much of the coffee. In a shallow dish or cake plate, place the soaked Maria biscuits so that they form the shape of a flower. (One Maria biscuit goes in the center surrounded by six other cookies). After each layer of cookies, spread on the butter / sugar mixture. Once you get to the last layer, use the remaining butter / sugar mixture to frost the sides of the cake as well. Sprinkle some crushed Maria biscuits or coconut on top of the frosting on the last layer to finish off the cake. Note: To make a larger cake, just double the ingredients above and follow the same directions. Also after soaking each Maria biscuit, I like to place them in a separate dish so that they dry off a little before I put them on the cake plate.
