Just making white sauce for mac & cheese and thinking back to the old Practical Arts course at Spring St. Jr. High. Name has since morphed to Home Economics and now Family & Consumer Sciences. We had to go thru the dreaded tunnel to get to this much maligned class, but I must say that unlike some other school courses, the lessons I learned in that class have served me well over the years. We learned how to make smooth white sauce, personal hygiene including how to file our fingernails properly, how to wash & dry dishes properly (a good washer should be able to keep up with 2 dryers--or was it the other way around?)--cold water to rinse starchy pans like potatoes and hot for greasy pans; how to sew a straight skirt (now known as a pencil skirt) and, of course, aprons. I have to say Ive sewed many skirts and aprons in my day, admittedly not lately though. Cant remember the teachers name. She had short gray hair and bangs and was all business, but a good teacher, as were the majority of our teachers form the Nashua School System.
