Just whipped these mini frittatas up for breakfasts this week. Kinda just made it up as I went along but they turned out pretty damn yum! Paul said they were a bit green for him. I say good! More for me!. I really like spinach ;) Firstly, I preheated the oven to 180 degrees Celsius. Then, in a bowl I whisked the eggs, cream cheese and tasty cheese until combined. I seasoned the egg mixture with salt and pepper. I sautéed the mushrooms in the butter and added the defrosted spinach. I transferred the mushrooms and spinach to the egg mixture using a slotted spoon as I didnt want any of the liquid residue in the egg mixture. I divided the mixture evenly into muffin trays and baked for 20-25 mins. I took them out of the muffin tins and let them cool on a rack so that they didnt keep cooking in the tins. Cant wait to have a couple of these with a latte in the morning! 👌 Ingredients and nutritional information in the images below.
