KADAI VEGETABLE GRAVY Kadai Vegetable is a spicy Indian gravy served as a side dish to Indian Flat breads. Indian spices are freshly ground and added to the gravy which adds more flavor and taste to the recipe. I have added Carrots, Green beans, cauliflower and potato. Mix and match vegetables of your choice to suit your taste buds. Please check below for step by step instructions and pictures for preparing spicy Indian Kadai Vegetable gravy. Preparation Time: 10 mins Cook Time: 30 mins Yields: 3 Servings Ingredients Table 1: To dry roast and grind Coriander seeds | Dhaniya 2 tsp Cumin seeds | Seeragam 1 tsp Fennel seeds | Sombu 1 tsp Red chillies 3 Black pepper | Milagu 1 tsp Cloves | Krambu 1 Cinnamon stick | Pattai 1 inch Kasoori Methi crushed 1/2 tsp Table 2: Oil 1 tbsp Ginger and garlic finely chopped 1 tbsp Onions chopped 1/2 Cup Tomato paste 1/4 Cup Cooked Vegetables 1.5 Cup Salt As needed Coriander leaves For Garnishing Instructions: Dry roast all the ingredients mentioned in table 1 and grind it coarse powder. Heat oil in a pan. Add finely chopped ginger and garlic. Fry till raw smell goes off. Add onions and fry till they turn translucent. Add tomato paste and fry till raw smell goes off. Add the ground powder from ingredients in table 1. Add cooked vegetables and 1/4 cup water. Allow the gravy to boil. Switch off the stove and garnish with coriander leaves. Tips: Adjust red chillies to your taste. Add vegetables of your choice. I have added carrots, beans, potato and cauliflower.
