Kaiserschmarrn bananas and mint Kaiserschmarrn with Banana and Mint is an Austrian dessert made with pancakes, with the mint adding freshness without overpowering the sweetness of the fruit and powdered sugar/icing sugar. Prep to plate: 35 minutes Ingredients 5 eggs, separated 3/4 cup milk 3/4 cup flour 1 tsp vanilla extract Pinch of salt 5 tbsp white sugar 2 tbsp butter Ample powdered sugar/lots of icing sugar 2 ripe bananas 2 tsp brown sugar 5-6 mint leaves, roughly chopped Instructions Beat the eggs whites until stiff peaks form. Put aside. In a separate bowl, beat the egg yolks and sugar until fully integrated and smooth. Add the vanilla extract and the salt. Add the flour and milk incrementally/increasing gradually and alternating with the egg and sugar mixture until the batter is smooth. Fold in the egg white mixture to the batter. The resulting batter should be fluffy and light-coloured. Let the batter sit for ten minutes. Melt the butter in a large skillet/fry pan on medium heat. Add the batter and cook until the bottom and sides have browned. Once browned, cut the cooking batter into smaller pieces with two forks, and then flip pieces to finish cooking. In a bowl, mix the banana slices with the brown sugar. Add the chopped mint and mix again. Once the Kaiserschmarrn is cooked, remove to a plate and generously sift powdered sugar/icing sugar on top. Top with the banana and mint and enjoy.
