Kens Recipe of the Day: Boiled Tilapia Parmesan You will need 1/2 cup parmesan cheese (fresh), 1/4 cup of soft butter, 3 tablespoons of Plain yogurt, 2 tablespoons of lemon juice squeezed from a fresh lemon, 1/4 teaspoon of fresh basil, 1/4 teaspoon of ground black pepper, 1/8 teaspoon of onion powder, 1/8 teaspoon of celery salt and 2 pounds of tilapia fillets. Preheat your broiler, then grease a pan with aluminum foil. In a small boil, mix the butter, yogurt, parmesan cheese and lemon juice together. Season with the fresh basil, onion powder, pepper and celery salt. Arrange the fillets in a single layer on the prepared pan. Broil for 3 minutes, turn and broil for 2 minutes more. Remove the fillets from the oven and cover them with the parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and the fish flakes easily with a fork. Tilapia is very easy to overcook, so be careful not to . Serve this delicious fish with steamed spinach. Place a lemon slice fir garnish and to squeeze some lemon juice on top.
