Khao Niau or “sticky rice Issan is a Thailand region, close to Laos and Cambodia border. Its predominately agricultural way of live has managed to preserve some of home made food which is still close to a milenium old tradions of how a man used to nutrit himslef. One of such food is Khao Niau, which translates to “sticky rice”. The Issan kitchen is closely related to the Laotian way of cooking; the gustatory sensation is brought forward through a huge array of herbs as well as grilled, smoked, roasted and sun dried ingredients, which appeals to the palate of the connoisseur as well as the curious food lover. In the world wide range of rice varieties sticky rice is a unique form of rice grain and it is traditionally eaten with your fingers. With its earthy, smoky flavors and a higher content in carbohydrates sticky rice is the perfect choice to have with many of specialties from the Issan region, northeastern Thailand. Considered somehow a basic food for farmers while working on the fields Khao Niau could easy be compared to Pizza served in the Souh of Italy to farmers while working there.
