Kudos to the Klickitat Valley Health Dietary Team. Their healthy bar recipe was a hit at the 2014 Health & Wellness Fair as well as the pre-Fair lab draws. Heres the recipe so you can make your own healthy bars! KVH BREAKFAST BARS Ingredients: 1 1/2 cup oatmeal 1 cup flour 1/2 cup brown sugar, packed 1 teaspoon cinnamon 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup orange juice 1/4 cup vegetable oil 1 egg, lightly beaten 1 teaspoon vanilla extract 6 ounces dried mixed fruit - diced 2 tablespoons oatmeal Preparation: Combine 1 1/2 cups oatmeal (not quick cooking), flour, sugar, cinnamon, soda and salt. Combine juice, oil, egg and vanilla and add to dry ingredients. Mix well. Stir in fruit. Spread into a 13x9 inch pan that has been sprayed with no-stick cooking spray. Sprinkle with the remaining oats. Bake at 375 F for 20-22 minutes or until lightly browned and edges pull away from the sides of the pan. Cool completely. Cut into bars. Store tightly covered. Nutrition Information: 117 calories, 4 grams fat, 20 grams carbohydrates, 2 grams protein per serving. This recipe is low in sodium.
