Recipe: 12 eggs 3/4 c cream cheese 2/3 c heavy cream 3 c fresh spinach Blend above in ninja blender Brown 1 pound breakfast sausage and 1/2c chopped onion and 1T poultry seasoning then distribute among 24 prepared muffin tins. Top with grated cheddar and then egg mixture. Bake at 350 for 15 - 20 mins (i like them browned so the sausage gets a bit crispy) . Yum. Each muffin has 1.5 carbs
