LCHF and NO artificial sweetners! #nutritionforlife We are very excited to be able to offer an LCHF Christmas Pudding recipe that only has 1 1/2 Teaspoons of sugar per 130gm serve (plus 1 teaspoon if you add the chocolate sauce) compared to a Lions Christmas Pudding that has 22 teaspoons of sugar per 130gm serve (without sauce!) But, firstly we would love to welcome Dominique Tempone-Wiltshire to our Nutrition for Life team! Dominique is a wonderful cook, food stylist and photographer. Together, Lucy Millwood, Dominique and Kate Dowling are creating a bank of #lchf recipes for our Centre, that have NO artificial sweeteners in them. We will be sharing more of our LCHF recipes with our Nutrition for Life Community after we launch our new website in February 2015. When I asked Dominique to make the first LCHF pudding recipe it did contain some sweeteners, but after meetings with our team, we decided we really wanted to live by our motto of #realfood and Lucy developed the recipe below which looks just like the one Dominique made when cooked :-) Enjoy ... LCHF Christmas Pudding Serves 6 Ingredients; 200gm oven roasted kent pumpkin 220gm almond butter 4 x eggs 16gm cocoa powder 2tsp mixed spice 2tsp baking powder 1tsp pure vanilla extract 60gm mixed berries of choice i.e. blueberries, blackcurrants, redcurrants 75gm mixed chopped nuts of your choice i.e. hazelnuts, walnuts, macadamias Method 1. Place pumpkin, almond butter, eggs, cocoa, mixed spice, baking powder and vanilla in a bowl and mix with an electric beater until combined 2. Stir through berries and nuts 3. Pour into a lined and greased round cake pan and loosely cover with aluminium foil 4. Bake in a pre-heated oven at 160 degrees Celsius for approximately 25 mins or until slightly risen in the centre and a skewer comes out clean. 5. Serve warm with pure or double cream. 6. Store in an airtight container in the refrigerator for up to 7 days. LCHF Chocolate Sauce Ingredients; ½ cup cocoa powder, sifted ¼ cup coconut oil 2 tsp pure vanilla extract Method Soften the coconut oil until it becomes a liquid Stir in sifted cocoa and vanilla and mix well until smooth Serve immediately whilst still warm
