LEFSE RECIPE Helen Pedula shared her lefse recipe with Sandy Smith a day or so ago, and graciously consented to also let us share it with you on this fb page. Helen says the recipe originally came from Emma Hallingstad. Helen learned how to make lefse from Albert and Aunt Elsie Stand, as did her brother, Jim Sargent. Albert had to get the recipe from the next door neighbor because for years they had made the Norwegian treat just by feel. Try making your own lefse this holiday season! Let us know how it turns out. Lefse 4 cups Mashed potatoes (Chilled) 1/3 c Butter 1/2 c. cream 1 Tbsp sugar 1 teas. salt 3 + c flour Mix butter, cream, sugar, and salt into potatoes. Add flour to roll into balls. Roll balls into circles. (Roll as thinly as you can. Much thinner than pie crust.) to fit 400 degrees grill. Brown slightly and turn. Brown second side. Cool between layers of towels. Fix with butter & sugar and enjoy. The amount of flour that is required varies with kind of potato. I prefer white potatoes. Good lefse takes practice. I enjoy making it. - Helen Pedula
