LEFT OVER ROAST N VEGGIES POT PIES MADE EASY .... I use the same dough as my biscuit recipe ... In fact I did this with leftover dough from last nights dinner too ... The best, flakiest, yummiest, easiest pot pie youll ever make ... Here are step by step instructions ... THE PASTRY (recipe at end of post) Refrigerate and roll out the dough cold ... You dont want it room temp, it has to be chilled .... Fold rolled out dough into 1/4 fold .... (in half then half again) Place the point of your folded dough in the exact center of a well buttered baking pan/dish .... Unfold and form into dish .... Trim extra dough and make a new dough ball to roll out as your top pastry cover ... If it seems a tad dry add a touch of water to it .... Put both in the fridge to chill before filling and rolling out again ... Dont forget to butter your baking pan/dish .... Buttering it will insure it slides right outta the baking dish ... Just cover it with a plate, flip it over, then cover it with a bowl n flip it again to serve as you see pictured here... THE FILLING Make some gravy .. I used about 2 cups of the stock from the crock pot when I made my gravy ... I added some flour, (about 3 or 4 tablespoons) whisked into about 1/4 cup of milk and added 1 packet of McCormicks brown gravy mix .... While your gravy is cooking, cut up your leftover roast n veggies ... When the gravy is done, remove from heat, add the meat n veggies and let it cool to room temp ... Once its cool, roll out your refrigerated dough ball for the top cover .... Remove the formed bottom pie in the dish from the fridge, pour your gravy/meat/veggie mix into it, only filling it about 2/3rds full, then brush the exposed dough with a milk n egg wash .... Place your top dough piece in the pan, seal the seam by pressing on it from outside the dish w/ur thumb and 2 fingers sealing the dough inside in a pinching motion ... Once its all sealed, trim excess dough ... Brush it with butter, poke some holes in it and then pop it into a 400 degree oven for 30 minutes .... Easy peasy homemade pot pies ... Enjoy :) PASTRY RECIPE 2 cups flour (whole wheat if u have it, unbleached at the very least) 1 tablespoon baking powder 1/4 cup raw sugar 1 teaspoon salt 1 teaspoon white pepper 1/3 cup lard (no shortening!!! USE LARD!!!) 2/3 cup milk 1 teaspoon apple cider vinegar .... (makes 4-6 pot pies depending on size of baking dish, if you make em the size of the ones from the store itll make 8)
