LEFTOVER MEXICAN FOOD SOUP Rich and I had the absolutely most pedestrian Mexican food ever (blander than TV dinners) in Hays, Kansas. Of course. We took the leftovers home (3/4 of the food), and since I throw NOTHING away, the next day I cast a sharp eye on the leftovers. Soup!!! This is what I did. Sauteed a chopped onion in olive oil with a little cayenne pepper and ½ tsp cumin Added two cans of chicken broth and ½ cup salsa (or a little more) Juice of ½ lemon (I put this in almost everything) Salt and pepper to taste Chop up the leftovers and put in pot. Bring to a boil for a few minutes and serve. Delicious It has evolved or been simplified…Jo skips the onion part and throws it all in a pot and it tastes just as good. If the leftovers are skimpy, she adds a can of black beans. Always clean out your refrigerator with leftover veggies, etc. Evolved version – Use lime instead of lemon, add a little cilantro, and add a chopped up perfectly ripe avocado or two in at the last minute. Serve with flour tortillas and butter. We now order the largest dinner combos and nachos for leftovers plus take home the freebies for this soup. ENJOY!!!
