LENTIL-BULGUR SALAD * 1 cup dry red lentils * 2 cups water * 1 cup dry bulgur wheat * 1 cup boiling water * 1/4 cup olive oil * 1/4 cup fresh lemon juice * 2 cloves garlic, crushed * 1/2 tsp. salt, or to taste * 1/2 tsp. oregano * 2 tbsp. freshly minced mint (or 2 tsp. dried) * 2 to 3 tbsp. freshly minced dill ( or 2 to 3 tsp. dried) * Pepper to taste * 1/4 cup freshly minced parsley * 1/3 cup minced red onion * 1 pepper, diced (any color) * 1/2 celery stalk * 1/2 cup crumbled feta cheese * 1/2 cup Italian black olives * 1/2 cup toasted walnuts, pine nuts, etc. -Cook the lentils until tender but not mushy. Drain and run cold water over them to cool. Place bulgur in a small bowl. Add the boiling water, cover with a plate and let stand 15 to 20 minutes. Mix olive oil, lemon juice, garlic, salt, oregano together. In a small bowl, combine lentils, bulgur and remaining ingredients, except nuts. Toss with dressing. Just before serving top with nuts. Will keep for several days.
