LENTIL SPINACH yummy, simple VEGAN LUNCH for one. Boil a cup of water in a pan with a lid, stir in 1/2 tsp of good stock, I use Marigold Organic Bouillon and 1/2 tsp of turmeric powder, throw in 2/3 of a cup of red lentils..[I didnt to this one, but you can add any spices out of these , ginger, curry leaves, sambar powder] extra if you want... when boiling turn down to lowest heat and check until lentils absorb water and are soft - remove from heat and stir in handfuls of spinach.. it will wilt and needs no cooking. If you want to make it hotter, add cayenne pinch or you can throw in chopped garlic before serving, or garlic flowers if the season is right. Time taken 10 mins at most. And while that was cooking underneath, broccoli and cabbage steaming on top. If you have a good store of spices, cheap food can be made to taste out of this world.
