LIFE ON OUR NUT FARM – MY MUFFIN MAN I truly believe Michael has perfected the art of muffin making. This morning, he baked a batch of my favorite, Apple Walnut. He has refined this recipe over the years. He uses two fresh apples that he peels and shreds. He adds a cup of applesauce, two eggs and brown sugar. Nutmeg and cinnamon follow as well as crushed bran flakes. He stirs with the strength of man who still works out regularly. Needless to say, the dachshunds are underfoot. There is a lot of overspray! It is fascinating watching him in the kitchen. He adds a dash of this and a dash of that. He rarely uses any measuring devices. I think he adds olive oil and a bit of water at the end followed by a cup of his favorite organic whole-wheat pastry flour. When he is happy with the consistency of his batter, he adds the walnuts. They go in without being chopped, a large handful. Next, a handful of sunflower and flax seeds; the muffin pan quickly filled. The oven preheated to 375 degrees and in goes the creation. Twenty minutes later, viola’ Michael is gently placing each delight on a cooling rack. Michael’s muffins have traveled the world. The night before any of our trips, he bakes a fresh batch to take along. I pack them into my carryon as a backup or treat on the journey ahead. Many Blessings from Our Nut Farm. January 21, 2015
