LITTLE POTS OF STRAWBERRY Not quite a jam , not really a jelly . These little pots are to use as a topping over ice cream or whatever you fancy . Weigh the strawberries ,add equal weight of castor sugar, the juice and zest of an orange and half a vanilla pod split down the middle. Bring to the boil gently and simmer . To test for a set , spoon a little of the liquid onto a plate and cool in the fridge for a few minutes . Run your finger through the syrup and if it leaves a line youre nearly there. We dont want these to set , I did the test , the line held for a bit and then run back together again - take off the heat at this point . Skim off any foam that rises , just before ladling the strawberries + syrup into the hot jars add a tiny knob of butter to the mix , this will clear the jam a little more . Divide between the jars , scape the vanilla seeds from the pod and add to each jar . Put the lids on , when cool keep in the fridge . JAM HINTS The strawberries need to break down if you are trying to get a jam set . To test for a set , spoon a little of the liquid onto a plate and cool in the fridge for a few minutes . I find the best way to heat the jars in the oven is to place them in a baking tray , sitting on a T towel . When you come to pour in your jam , any spills are caught by the T towel . Watch you quantities if you are using jam sugar - I tried some last week and ended up with a rock hard set .
