LOX AND A SCHMEAR IF A SEAGULL FLIES OVER THE SEA, WHAT FLIES OVER A BAY? What’s so funny about this? This is kind of an obvious riddle, so instead of answering it, I’ll let you look at the picture to get the full effect of the pun. It helps if you’re from New York, but it’s not necessary. Bagels have become amazingly ubiquitous over the last 20 years. They are everywhere in the US, small towns, big cities, little villages; supermarkets, delicatessens, grocery stores, bars, specialty bakeries even. You can buy them fresh, frozen, packaged by the dozen or one at a time. But that doesn’t mean that they’re any good. The secret, I’m told is that they have to be hand rolled, boiled, then baked. Most commercial bagels you’ll find in the US and elsewhere don’t go through this process. There are shortcuts to cut both time and expense, but they are not worth it. The reason I say it helps if you’re from New York is that here you can still find bagels made in the traditional way. Perhaps a few other cities like L.A. or Miami might have bagels that are decent and I suppose you could go to Poland or Russia where they and Bialys originated and you might actually find a bagel bakery there, but I doubt it. A purist will tell you that a bagel needs no additions and tastes fine just the way it is. I’m not a purist and I freely admit that I like garlic, onion, poppy, etc. on my bagels. But blueberry, cinnamon, strawberry, chocolate? Give me a break. And what about toppings? Smoked salmon (lox), and cream cheese, plain or scallion, are the best; butter is fine, even a little humus. But peanut butter and jelly? Nutella, maple syrup? Hey, a bagel is NOT desert! Some of these combinations are so disgusting that even a sea gull would turn one down, and they’ll steal and eat just about anything. And what about a bay gull? And THAT’s what’s so funny!
