Lake and Cake Cafe coffee is a boutique roast supplied exclusively by The KIND Secret. The KIND Secret Coffee Story is a unique blend selected from the finest growing regions from around the world. This unique blend is a combination of specialty coffees from Brazil, Ethiopia, Guatemala and Kenya. Each of these Single Origin Coffees have been hand selected by Q-grader. The coffees have been rigorously tested and distinctively chosen based on, fine cup quality, originality and sustainability. The blend has been designed to work well with milk, although it can be thoroughly enjoyed black. The taste notes of The KIND Secret Blend resonate with the sweet toffee character of a honeycomb chocolate bar. The body is full, creamy and round, the acidity is refined and the sweetness is evidently distinctive. Origin : Brazil Region : Macaubas, Monte Carmelo and Pirapitinga in the Cerrado Altitude : 900-1100 metres Process : Pulped Natural Taste Notes : Mouth watering Toffee/Caramel/Chocolate. Intense aroma of honey and caramelised sugar. Balanced sweetness, refined acidity and full, creamy body. Origin : Ethiopia Region : Sidamo Altitude : Sidamo (or Sidama- the latter refers to the Sidama people, the former is what used to be known as Sidamo province) covers a large area spreading through the fertile highlands south from Lake Awasa in the Rift Valley. It is made up of over 20 different administrative areas, or ‘woredas’, with varying microclimates and altitudes, so there is a big variety of both grades and cup profiles that end up labeled as Sidamo. Process : Sundried Taste Notes : This coffee displays an intense floral aroma, balanced sweetenss, notes of demerara sugar, blueberries and cocoa elegant aftertaste. Origin: Guatemala Region: Antigua ‘Los Volcanoes’ Altitude: 1600-1210 metres Process: Washed SCR: 16/18, SHB Taste Notes: This is a complex Antigua, produced in rich volcanic soils and with near-perfect temperate climate. This microclimate produces a coffee with crisp sparkling acidity, full body, and distinctive sweetness, such as, black cherry, lemon and tropical fruits. He has been a specialty coffee roaster for 26 years and has established roasting businesses in Vancouver Canada, Tokyo Japan and in Sydney Australia. He established his own wholesale specialty coffee factory and retail chain of coffee shops now known as Danes Gourmet Coffee, prior to founding Michel’s Espresso in 1999 which has 350 espresso bars. By 2006 Michel’s was rated as the leading coffee chain in Australia by BIS Shrapnel. As Chairman of the Australian Coffee & Tea Association he was instrumental in establishing the barista training standards currently used by Government Registered Training Organizations nationally. He trained World Barista Champion Paul Bassett and has also been head judge at World Barista Championships and was appointed in 2004 as Executive Director of the World Barista Championship Ltd a Not for Profit Company based in London. He regularly travels to coffee estates around the world and has purchased some of the world’s best coffee beans including the Cup Of Excellence winning coffees from Guatemala 2003 and Brazil 2006 and created unique coffee recipes. He has worked extensively with research at Mountain Top Coffee Estate one of Australia’s leading coffee growers.
