Last night I made these chickpea burgers from scratch. Recipe credit goes out to YumUniverse I only modified a couple things. I added Miso paste (mixed 1:1 with water) ~about 2 tbsp which really kicked the flavor up a notch! Here is the recipe: 1 tbsp unrefined coconut oil 1 1/2 cups cooked chickpeas 1/2 cup yellow onion, diced 1 clove garlic, minced 1 cup steamed sweet potato, diced 1/2 cup celery, diced (I went without the celery) 1/2 cup red pepper, diced 1 tbsp dijon mustard 1 tsp smoked sea salt or smoked paprika 1 tbsp +2 tsp vegan Worcestershire 1 tbsp Montreal Steak Seasoning ( I actually used 2TBSP miso gravy) 1 cup gluten-free oats 1/2 cup cooked quinoa 1 tbsp coconut aminos (can sub tamari, liquid aminos or soy sauce if you prefer) Salt and pepper to taste Place chickpeas and steamed sweet potato in food processor Saute the veggies in the coconut oil till soft, about 5 min. then transfer to food processor. Add remaining ingredients to food processor and pulse about 10 times. Should be chunky. form into patties and cook over medium heat on skillet with coconut oil. Pile onto toasted sprouted bun with your favorite condiments and veggies.
