Last night, we enjoyed the Kung Pao Chicken so much that we have decided to prepare another Chinese dish in our Lodge Cast Iron Wok this evening. I thought I would go ahead and post the recipe so everyone has plenty of time to dash to the market and get the necessary ingredients and we can have a virtual Chinese feast together. Of course, you first must have a Lodge Cast Iron Wok or the dish just wont taste like traditional Chinese. You also need a Rice Cooker to prepare the rice. Also like last night, you need a medium bowl for your marinade and a small bowl for your sauce. Dont forget your chop sticks. Tonights feast is Stir-Fried Sesame Chicken. Take one pound of boneless, skinless chicken breasts and cut it into 3/4 inch thick slices. Be sure to start cooking your rice first because this dish doesnt take long at all to prepare. For your marinade, put one tablespoon of sesame oil, one and one half teaspoons of soy sauce, one and one half teaspoons of Chinese rice wine, one teaspoon of grated fresh ginger and one teaspoon of cornstarch into the medium bowl and stir until the cornstarch has dissolved. Add the chicken strips to the bowl, stir gently to coat with marinade and then let it stand at room temperature for 15 to 20 minutes. Prepare your sauce in a small bowl by adding half a cup of chicken stock, one tablespoon of soy sauce, one tablespoon of sesame oil, one tablespoon of honey, one teaspoon of white rice vinegar, one teaspoon of Sriracha Chili Sauce and two teaspoons of cornstarch. Stir it all together until the cornstarch is well dissolved then set the small bowl aside. Heat your Lodge Cast Iron Wok over high heat on your range until it is hot (5 to 10 minutes). Add a tablespoon of peanut oil and swirl to coat the bottom of the Wok. Add one minced garlic clove and stir for about 30 seconds. Add the Chicken and Stir Fry for about two minutes, until no longer pink. Add one cup of frozen sweet peas to the Wok and cook for one minute. Finally, stir in the sauce and simmer for two minutes until it thickens. Remove Wok from heat. Fill a couple of bowls half full of white rice from your rice cooker and then spoon the Sesame Chicken over the rice. Sprinkle a teaspoon of toasted white sesame seeds on top and enjoy. Play some traditional Chinese music on the stereo to create the right mood.
