Last week, we hosted our first Cooking Heart to Heart event with Fresh by Brookshires and we wanted to share one of the recipes with you :-) Hope you enjoy! Fat Free Hummus Water 1-1/4 Cup Bases-Vegetable, Low Sodium, 1-1/2 Teaspoon Garbanzo Beans (Chickpeas), Canned Rinsed & Drained 2 Pound Garlic, Fresh Mashed 1-1/2 Teaspoon Lemon Zest, Grated, Fresh 1-1/8 Teaspoon Lemon Juice, Fresh, 3-1/2 Ounce - Volume Salt 3/8 Teaspoon Pepper-Black, Ground 3/8 Teaspoon Preparation: In a pot, combine water and vegetable base. Bring to a boil. Let simmer until base is dissolved. Chill. In a separate pot, cover chick peas with cold water (not listed). Bring to a simmer. Cook for 4 to 5 minutes. Drain. For Service: In a food processor or blender, add chickpeas, garlic, lemon juice, lemon zest, salt, pepper and chilled vegetable stock. Process until smooth. Hold refrigerated at internal temperature of 40 degrees or below for service. Shelf Life: Use within 48 hours.
