Late each fall, just about the time the snow is threatening to fly, we plant garlic. It is literally the last thing we do on the farm before winter sets in. Being Sicilian, Vince typically puts in 3 - 100 foot rows. That about gives our family enough garlic to use at all three meals every day though out the year. In contrast to planting weather, Vince took to weeding the garlic bed in the sweltering sun on Friday. Our garlic is just starting to form scapes. A scape is the curly cue stem that comes out of the middle of the plant. Once they are fully formed, we slowly pull them up out of the plant. If they are not removed, they sap energy from the growing garlic. The scapes actually pop off the plant if you pick them correctly. Garlic scapes can be used to make pesto although we have found that scape pesto tends to be quite strong. We also cut them into small pieces with a kitchen scissors. That way, they can be used on salads. We also saute them and mix with scrambled eggs. Have you heard of garlic scapes before? How have you used them?
