Late last night I did some advance meal prep for the week. A pot of chile verde has been simmering in the crock pot, so thats for todays dinner, and I cooked, drained and seasoned meat for tacos later this week (sealed that up and froze it for the interim) - Ill make up a pico de gallo the night before so itll have most of a day for the flavors to blend while its sealed up in the refrigerator -- and if Im in the mood Ill make a batch of guacamole the day well have the tacos. Tilapia, possibly some beer-battered shrimp, some sort of rice side dish and salad will be one of the other nights this week; I may want to see if some other preparation for the tilapia than my usual, very basic, lemon pepper broiling, appeals. Another night will be burgers and brats. Theres some chicken I need to use, too, but I havent decided what I want to do with that yet. I have the makings for a variety of cookies, but havent made a batch of anything yet. While I may start in on it sooner, Thursday nights the target for wrapping presents -- nearly everything should be in hand by then.
