Learned how to shuck an oyster tonight. 1. Wear a chain mail glove on the hand that holds the oyster. 2. Use a small, short-blade knife, and slip it between the two halves of the oyster shell. 3. Twist the blade to pry the shell open. 4. Hold the oyster so that the oyster juice drains out. (Ewww!) 5. Use the knife to slice the tendon, or ligament, or whatever it is that holds the two halves together and throw one half into the trash. E 6. Use the knife to scrape underneath the oyster meat so it separates from the shell. E 7. Rinse under water then let it drain again. 8. Prepare a wide shallow bowl with two layers of ice. Bottom layer is ice cubes. Top layer is small, Sonic-type ice that gets smoothed over like ice icing. 9. Place the half shells in a ring around the outer circumference of the bowl. 10. Place six lemon wedges between the oysters. 11. Fill three small bowls with a lemony-butter sauce, a horse radish-tarter sauce, and a red sauce and place in the center. 12. Pull leaves off of a sprig of parsley and scatter around the oysters. Serve.
