Leftover weekend. Yesterday turkey sandwiches. Today, got the good meat off the carcass, a huge bag of good meat. Made turkey hash with fried eggs for lunch and put the carcass into my biggest pot with onion, carrots, celery, thyme, bay leaves, pepper corns, turkey stock and water. It has simmered all day. Will chill it tonight, tomorrow, simmer some more (never let boil), then take out all the ugly stuff (left in skin, meat on the bones, onion skins), strain through cheesecloth, and chill again. Then skim off the fat. and make soup with the leftover meat chopped, leeks, carrots, celery, barley, and thin noodles. Mmmm.
