Lemon Creme Caramel *Milk powder 1 cup *4 large eggs *Water 2/3 cup *Sugar 1/3 cup (or according to taste I intentionally made it less sweeter) *Lemon zest 1 tbsp *2 tbsp butter (purely optional) *Additional sugar for caramelisation Procedure 1.Bring the milk powder,sugar,water and lemon zest to boil until a faint lemon aroma is in the air make sure your milk shouldnt thicken if necessary add more water.At the end add the butter which is purely optional I add it to make my pudding more creamy. 2.On your pudding mould spread a film of sugar in the bottom and rotate your pan over flame so that your sugar burns and caramelises and completely covers the bottom.Then keep it aside to cool. 3.When your milk cools beat in the eggs and pour the mixture in the mould and steam bake it for around half an hour. Steam bake in oven *Fill your baking tray and put it in the lower rack of your oven. *sit your pudding mould in the tray *Set the temperature to 160 C.The heat should be applied from both bottom and up. *Steam bake for 30 minutes Steam bake in stove *Fill a large sauce pan with water *Sit your pudding mould covering with a lid in the sauce pan.Make sure your pudding mould is 2/3 soaked in the water *Put something heavy over the top of your pudding mould so that it dont move *Now cover your sauce pan.And steam bake your pudding for around half an hour in medium flame.
