Lemon Custard Cake What you need: 2 cups flour 3 eggs 2 teaspoons baking powder 1 box of instant lemon pudding (3.4 ounce) 1/2 teaspoon salt 1/2 cup butter, softened 1 cup sugar 3teaspoons vanilla 3/4 cup milk 1 teaspoon lemon juice Preheat oven to 350. In large mixing bowl, whisk together flour, baking powder, and salt. Cream butter and sugar until fluffy. Add in eggs, one at a time. Add in vanilla and mix thoroughly. Prepare pudding as per "Pie" directions. Divide pudding in half (Refridgerate second half, for later). Add first half of lemon pudding to the cake mixture. Fold into batter. Slowly add flour and milk. Batter should be smooth. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow cake to cool completely.Carefully cut cake in half, giving you a two layer cake. Place the first layer on a serving plate. Grab that chilled pudding from the fridge, and "Frost the first layer. Use all of the pudding. Add the second layer of cake. Chill for 1 hour. You can frost if desired, or top with powdered sugar or a simple glaze.
