Lentil Meatloaf recipe: I dont use a recipe. It comes out different everytime depending what I choose to do. Being half Italian, nothing is measured..its just until it tastes right. First if u know how to make a meatloaf it is replacing the meat for lentils. This one does have chicken and lean ground turkey as it was in my sauce. Buy a bag of dry lentils. I prefer the brown over the red lentils which r better for soup. The cost is abt $1.00. Cook the lentils with plenty of water cuz they expand on med heat until tender but not chewed it mushy. Drain in colander. Shake all water out u can. One egg. Bread crumbs. I make my own by toasting 12 grain bread and in small amounts grind in blender after tearing the toast in small pieces. This time i used my homemade spaghetti sauce that had shittake mushrooms, ground turkey , chicken and plenty..alot of garlic. I.also.added sautade(?) Baby potabella mushrooms and celery from the garden. Mixed it all together to the right consistacy. It.its too liguidy can add more bread crumbs or vrggies. I added carrots and summer squash. Olive oil in cooking pan on bottom and sides of pan. U dont need alot. I spread it around with a piece of saran wrap.spread mixture in pan and coat the top with just enough sauce. Not alot just enough to cover top. This time i added a small amount of shredded cheese. Oven at 350 uncovered for 20-15 min till cheese melts then cover plan with silverfoil cook aprox another 40 min variations: subsitude bread crumbs with oatmeal. U can vary this in many ways. One fav way is using red, green and yellow peppers and onions. Cut them up..i prefer longish bigger pieces not tiny. Saute first till cooked with garlic. Saute in olive oil peppers first as they take longer. Then add the onion slices then garlic. I like the garlic in small chunks vs the jared tiny pieces but its all individual preference. If u want to add some lean hamburg, turkey u can if wanted but cook fist till 1/2 cooked before adding veggies. U can really add any veggies. To add to or replace peppers. If kale, blanch first, cook carrots first, add summe squach to saute mix. U want the veggies To support each other taste wi kale is bitter and strong. Id cut it up.small and wldnt do it with peppers. The tastes shouldnt fight with each other... then again add some sauce..not ketchup. A little at a time u dont want it soupy. Mix together. Oatmeal unlocked if not bread crumbs. Eggs. Add spices.himaly salt, Italian seasoning etc to saute while its cooking. Use a good tomato sauce. Now when adding altoget her, veggies first egg, some lent, sauce oatmeal or crumbs....Ive even added quinola, or couscous, etc. A grain Ive added.brown rice. ...once all added tast e it unlocked always. Add more spices or whatever it May need more of. In pan. Cover lightly with sauce. 45 min @ 350. Whew! Omg! This took forever. Any questions let me know.. ..i need a nap now ..lol
