Lets talk about local Kopi Baristas. Although you can find local kopi at almost every shopping centre nowadays, the local Kopi Barista is a dying breed. It takes skill and experience to be able to brew coffee with a sock. Unfortunately you can only find these guys at old coffeshops or the hawker centre nowadays. Our young Singaporeans are all going the way of the Italian expresso machine! I guess you cant blame them. If they take on local kopi they can only charge $1.40. If they pull an expresso, its at least $4 a cup! Part of the problem is our own culinary prejudice. We are the ones telling them that we place a lower value on our own heritage kopi and a higher value on European coffee. Unless there are younger Singaporeans passionate enough to take on the sock, we will all be drinking generic, mass market kopi made by foreigners in 20 years time! I am hoping that some young coffeepreneur can share my vision of a gourmet local kopi concept where kopi is still made by an expert barista but in a nice environment. It can be updated and upgraded eg better beans, own roasting machine, Italian silk socks (joking), classy cups, comfortable environment heck I wouldnt even mind if you sold Croissant with Kaya. I just want my kopi to be made by someone who is passionate about making an ultimate cup of kopi! Cafes selling expresso style coffee are sprouting up all around the island. They are becoming a dime a dozen. I see a huge opportunity for a local style artisanal Kopi joint. We need to alter our own perception of local kopi in order to preserve it for another generation of Singaporeans!
