Lior Lev Sarcarz is the founder and flavor-magician of La Boite, a Hells Kitchen/NYC shingle that has made Fanboys and Fangirls out of chefs across America (and the world) with its miraculously delicous and inspired spice blends. Lior steps off from a very basic foundation of creativity. He sources the best spices across the planet and combines them (radically, perfectly, approachably) with genius and absolute sincerity. La Boite came to life 8 years ago. 4 years after that Lior met Paul Kahan. Kerrang! Some musings - Paul visited and worked with my great friend Olivier Roellinger, and he got to listen to the stories of spice blends inspired by people, by seasons, situations, by restaurants and chefs and he finally said What About Me? It was a joke but also not a joke. He and Cosmo and I were at an event in Miami and we began to really talk about it and I said send me your blends, your ideas. It wasnt a workshop. There were email exchanges but this was a natural way to work. I know what your restaurants do, I know what PK likes...the Garden, Bike Riding...this is in the blend. Its a very personal blend. My packaging is very simple but I made an exception for Paul with the Camoflage background on the label. It is the first time Ive done that but...thats PK. Thats why I love him. To use these spice blends, dont change the way you cook. There is no right way to use them. I encourage you to have all three out and play and explore. Try them as cooking spices and finishing spices. Try them in the middle of cooking. Try them in salads, in salad dressings, infuse Olive Oil with them, on roasted vegetables, with pastas, with crudo, sprinkled on fresh cheeses, try them, all 3, on Everything, learn them and use them the way you wish to. Use them on something you microwaved. Im okay with that. These are the Things under Discussion. They are Live in the shop. AVEC - a fleur de sel, lime, and green chilies blend for Poultry, seafood, and cheese (or Anything). THE PUBLICAN - an Urfa, orange, and cumin blend for grilled meat, pasta, and vegetables (or Anything). PK - an Aleppo, fleur de sel, and lemon blend for lamb, fish, and salads (or Anything) Pick em up and Fight the Good Food Fight
