Lisa Sears and Deborah Steele want my Cheapass Chili recipe - here it is Arts Cheapass Chili DISCLAIMER: Advanced notice to you chili perfectionists - yes I know real chili does not have tomatos or beans - This is Cheapass chili and it has extra low-cost stuff to make a ton of it for about $10 - Large pot and large saucepan INGREDIENTS Large can (28-29 oz) of tomato puree Large can (28-29 oz) of tomato sauce (I used Dei Fratelli from Publix - so buy some thing good) 1.25 lbs ground beef - 80/20 (meat to fat ratio) (you can also used chopped beef or other meats) One large white onion chopped One jar of sliced Jalapenos (as mild or hot as you prefer) 1/2 cup Jack Daniels 1/4 cup red wine 5 TBLS ground cumen 5 TBLS chili pepper 1 TBLS white pepper Large can of kidney beans DIRECTIONS Open tomato paste and puree and pour into large pot - add one full measure of water from each can Start stove to begin heating the pot. Sautee ground beef until almost brown and pour into pot - Chop entire white onion into small chunks - not tiny but about 1/4 to 1/8 pieces In a bit of the left over ground beef fat and a little olive oil saute lightly until transparent but firm. I also added a little water toward the end to finish - pour all into pot. Add Jack and Wine Add cumen and chili pepper Add Jalapenos Bring to a boil uncovered When boiling, reduce to low simmer, cover with small opening for steam to release After one hour - taste - if more cumen or chili pepper is needed, add more. Simmer for 4-6 hours Add beans 30 minutes before ready to serve. SERVE with any or all of the following: sour cream, shredded cheese (Jarlsberg is great) raw chopped onions or scallions, bacon (of course), chives eat and enjoy!
