Listen.... Is there only one type of tomato that can be dehydrated? Certainly there is a good answer, however most tomatoes can be and keep well if stored correctly. Yellow tomatoes taste more bitter and dont keep as well. Consider removing the seeds for batches that you want to keep for long term and leave them in for short term use. Remember that non-chunky spaghetti sauces can be dehydrated and keep indefinitely if stored in airtight containers and out of the sun.
