Lizzies Larder did a non-homogenised milk shoot-out this weekend...we made Mozzarella and Camemberts from the two available real milks: Pyengana and Ashgroves.... and the verdict? Well, the Mozz ers liked the Pynegana better, as it produced a quicker stretch … and the Camembert-makers loved the Ashgroves for its rich, creamy curd-set and the way it settled into beautiful soft cheeses. So, if you see me walking out of the shop with Pyengana milk, I will be making Mozz… and if I lug a crate of Ashgroves, I will be making Camembert… cannot keep things a secret anymore ;)
