Lobster yellow corn tacos with a creamy green sauce and black beans made with cottage cheese! Everyone happy & satisfied :) Deshelled Lobster, Mexican blend of 4 cheese, Yellow corn tacos, lightly toasted over fire, Sour cream, Tomato, chopped Lettuce, finely chopped Shallots, finely sliced Avocado, cut into small bit size pieces Tomatillo-Jalepeno green sauce (check older post for the recipe) Make a white sauce with butter, flour and milk, Dont season it! Add in the Tomatillo-Jalepeno sauce to the white sauce and a few tablespoon of sour cream, taste and adjust the seasoning at this point, per your preference! Black beans (6 serving) Wash and cook 1 cup black beans with 5 cloves of garlic crushed and 1 heap tablespoon of oregano, 2 bay leaves, 2 cups of water WITHOUT salt...I use a pressure cooker 6 -7 whistles! Open when cool, add 1/2 teaspoon, 1/2 cottage cheese...cook in medium heat for 10 minutes, its ready when it gets a nice thick consistency! I squeezed lime juice on the lobster and plated it on the toasted tacos!
