Cucumber Salad INGREDIENTS: - 2 Seedless Cucumbers (thinly sliced) - 1/2 Large Red Onion (thinly sliced) - 1 Bunch Cilantro (chopped) - 1/2 cup Unsalted Roasted Cashews (whole or chopped) - optional - 1/2 cup Stevia - 1/2 cup Rice Vinegar - 2 tablespoon Lime Juice DIRECTIONS 1. Prepare your ingredients 2. Mix the vinegar, lime juice and Stevia until the Stevia is dissolved. 3. Toss the cucumber, onion and cilantro. Add the liquid dressing and continue to toss. 4. Once the salad is placed onto the serving dish add approximately 1/5 of the nuts to garnish (optional).
