Looking for a healthy and quick mid week lunch idea? Mini frittatas are a perfect choice for school or work. They are a simple and tasty option and you can adapt the recipe to include anything you love or leftovers. Baked in muffin trays in around 20 mins they can be frozen after baking and then just take them out of the freezer in the morning, wrap in plastic wrap, into the lunchbox and youre ready for lunch - if they last that long!.
