APPLE PIE POCKETS Finally a pie crust with no added butter, oil, or gluten! The only fat source in this recipe comes from the nutrient dense almonds that make up the crust. These Apple Pie Pockets are a great way to enjoy a guilt free dessert or grab-and-go snack. The texture of the dough is exactly like a pie crust, and the apple filling provides a naturally sweet center. Delicious! NUTRITION FOR ONE SERVING (A 1/12 PIECE OF TOTAL APPLE PIE POCKET): CALORIES 118, FAT 7G, CHO 12.7G, PRO 3.2G INGREDIENTS FOR THE CRUST: - 2 tablespoons Psyllium Husk - 1/8 teaspoon Xanthan Gum - 1/3 cup Hot Water - 1 1/2 cup Almond Flour - 1/2 cup Corn Starch (Potato or Tapioca Starch would also work) - 1/8 teaspoon Salt - 1/2 teaspoon Baking Soda - Additional Water (3-4 tablespoons) INGREDIENTS FOR THE APPLE FILLING: - 3 cups chopped Granny Smith Apples (or apple variety of your choice) - 2 tablespoons Ground Cinnamon - 1/2 cup Stevia (can adjust volume for desired sweetness) DIRECTIONS: 1. In a small bowl, mix the psyllium husk and xanthan gum with 1/3 cup hot water. Allow the mixture to sit and thicken. 2. Place the almond flour, corn starch, salt, and baking soda into a processor and blend well. Stop to stir, then blend some more. This will create a finer almond flour. 3. Add the psyllium husk mixture which should now have a gel like consistency. Blend in the processor. If the dough is still crumbly add one tablespoon of water and blend. Continue adding one tablespoon at a time until the dough lumps together. 4. Place the dough on a piece of parchment paper or a silicone baking sheet. Roll it out into a thin even layer and set aside. 5. To prepare the filling, core the apples and chop into small pieces. This is most effectively done by pulsing them in the food processor. Place the apple pieces into a large bowl, add the cinnamon and stevia, and mix completely. 6. Spread the apple filling onto the dough. Fold the edges around the filling and smooth out the dough to seal in the filling. It is ok to leave a slit in the center where the apples are exposed but try to eliminate any gaps or holes elsewhere. 7. Bake at 350 degrees for 20-22 minutes. Keep in mind the crust will not brown the way it would if it had been made from flour. The Apple Pie Pocket will be ready when the crust feels solid to the touch and the apples are bubbling in the slit. 8. Allow the Apple Pie Pocket to cool for at least 10 minutes.
