Looking for gluten-free pita? Karam Lebanese Deli and Catering on Cedar Hills Blvd has created a gluten-free pita that puffs up when baked. It was divine! Claude Karam, the owner has encouraged his sister in law (see photo) to create this and the recipe R&D has been extensive. Best Ive ever tasted so far. They are looking to expand their packaged hummus, babaganoush, gluten-free tabouli, falafel tahini, tzaziki and their gluten-free Lebanese Lunch Box production into a 100% gluten-free facility and are also working on creating the gluten-free pitas there, too, soon. So if you are looking for an amazing pita, there it is. In the mean time, most of their food is naturally gluten-free! NOTE: it is baked in the same oven as their conventional pita and there is a regular bakery on site, so there is a significant cross contamination risk! I cant wait until they transfer the process to the gluten-free facility. Ill be the first in line!
