Looking for more anti-inflammatory meals? Personally, I find it hard to work anti-inflammatory omega-3-rich fatty fish (like salmon) into meals. Making a Thai curry with coconut milk is a surprisingly great way to work fish into your gluten and grain free meal rotation -- its surprisingly sweet and not hot or abrasive with spice either.
