Low Carb Paleo = Elevated Blood Sugar? By doing clinical trials on his patients, Dr. Alan Christianson found that people with low carb Paleo-type diets had elevated stress hormone levels in the afternoon and evening. These elevated cortisol levels would cause a spike in blood sugar at those same times. When he added back in a small serving of grains and beans at lunch and dinner, those levels would normalize. And when they did, his patients would shed weight from around their midsection, improve their mood, sleep better, and improve their overall health. As a result of these patients and hundreds of others, Dr. Christianson was inspired to write his book the Adrenal Reset Diet.
