Lunch today, fresh bruschetta. 8-10 roma tomatos 4 - 5 sprigs fresh basil 4 cloves fresh garlic 1 small red onion ~ 1/2 cup olive oil ~ 1/4 cup balsamic vinegar Chop tomatos into small pieces Finely chop basil Smash and finely chop garlic Finely chop onion. put it all in a bowl, add oil and vinegar and toss well. Cover and put in fridge for at least an hour so that all the flavors infuse. Use good quality olive oil and vinegar. Always use fresh basil and garlic or you will be disapointed. Quantities of basil onion and garlic are subjective to taste but if done properly, you should be able to taste everything, sonewhat sweet wuth a tang. Takes about 15 minutes actual prep.
