Lunchbox rules: Yall asked how I set up my bulk lunchbox prep each week. Heres some insight into how I get it done fast and easy! Groceries: >>vegetables (usually carrots, celery, cucumbers or red peppers--but I usually only get 1 vegetable for lunchboxes each week and then vary from week to week. I hate wasting produce, and I dont want to get overzealous and buy too much!) and YES, get organic or farmers market! >>fruit (I ALWAYS have grapes on hand as long as they look good at the store, and I have oranges/clementines on hand at all times too--they are quick and easy! If something else super fun is in season, I may grab that too) >>1 package of either: organic non-gmo gluten free corn tortillas, pita pockets, or gluten free bread (again, 1 package is usually enough to get them through 1 week of lunches plus a little extra) >>nitrate, nitrite, sulfate free, hormone free, humanely raised deli meat (I love applegate farms) at least 1 pound sliced >>grass-fed cheese (again, love applegate farms) about 1/2 pound >>snack options: simply gogurt, nut mixes (just make sure you read the label--no nut mixes with soy clusters or anything like that), pureed fruit (I like Plum Organics), beef jerkey, turkey jerkey, almond butter, hmm...stuff like that... >>honest kids juice boxes (could they just have water, OF COURSE, but one juice box per day at school lunch is a fair and definitely not crazy) Once you have great groceries, the rest is easy! I use gallon freezer bags labeled with their name and numbers 1-5. (That way I know each week I made 5 lunches for each kiddo). I re-use the gallon bags every week--all I use these for is to store each lunch in the fridge til it gets transferred to their lunch box! Pretty easy, huh?! I line all the options up on the counter. I make them either a sandwhich, a pita, or, I use the tortilla to make a pinwheel. My kids told me a half of a pinwheel is enough food for them, but it will depend on the size of your tortillas and how hungry your kiddos get! BOOM, main item DONE. NEXT UP, their veggie for the day. EVERY day they get a veggie side item. BOOM, veggies are done. NEXT UP, fruit. They get a fruit in their lunch box every day! BOOM, fruit is done--and they can eat it for their snack, or with their lunch--either way. NEXT UP, I add TWO snack/side items to their lunch box. BOOM, sides/snacks DONE! LAST, I throw in a juice box. When Im finished (this usually takes me about 20 minutes) I have 10 gallon freezer bags full with all their lunches for the week! Every day after school, they get their empty lunch box out of their back pack, empty a freezer bag with THEIR name on it into their lunch box, and now their lunch box is ready to go for the next day! A trip to the grocery store and 20 minutes can make EASY, HEALTHY lunches for your kiddos!!! (And these lunches probably cost around $2-$4 each, depending on what goes in each day!)
