See you in the meeting, Recipe Corner: Hash Brown Potato Casserole is a delicious and easy recipe for a chessy potato side dish. It’s also a healthy, low calorie, low far, low cholesterol, low carbohydrate, low sodium, Diabetic and a Weight Watchers (2) PointsPlus+ recipe. Everyone will love this easy, cheesy and healthy Hash Brown Potato Casserole. Ingredients: 4 slices bacon, chopped 1 onion, chopped 1 red bell pepper, chopped 1 (30 oz) bag frozen shredded hash browns, thawed 1 (10.75 oz) can reduced-fat reduced-sodium condensed cream of mushroom soup 1 cup light sour cream 1-1/4 cups 2% shredded Colby/Jack cheese Directions: 1. Preheat oven to 375º F. 2. Cook bacon, onions and peppers in a large skillet over medium-high heat for 5 minutes or just until bacon is crisp, stirring occasionally. Transfer to a large bowl. 3. Add in hash browns, soup, sour cream and 1 cup of the cheese; mix lightly. Spoon into a 13 x 9 inch baking dish; top with remaining cheese. Bake 40 to 45 minutes or until heated through. NOTE: Frozen hash browns come in 2 shapes – small cubes which are called Southern hash browns, and shredded which are called country-style hash browns.
