MEAT: Raw tenderloin chopped into 6 equal segments Sautée pork tenderloin in a bath of 6oz house merlot, 1 tsp onion powder, pinch sea salt, pinch pepper, pinch Rosemary, 2tbs butter, 1/2 oz chopped fresh garlic (let it marinate in a bowl in the Fridge overnight) TENDERLOIN GRAVY: Heinz beef gravy + pan drippings from the meat. Mix together 50/50 ratio TWICE COOKED YUKON GOLD SUFFED POTATOES: wash and microwave whole potatoes for 10mins on high per 3 large potatoes. Slice in half and middle scooped out the middle part of each half. Set scooped out skins on a single plate and set aside Line Potato Skins In butter l POTATO MIDDLES: mash potato middles with 3 tbs butter, pinch sea salt, pinch pepper, 1/2 tsp paprika, 2tbs milk. Refill skins with mashed potato middles top with marble cheese slices and place stuffed potato half onto a single plate and place into microwave for 1.5 minutes Take out of microwave and top with dollop of sour cream and serve SALAD Sliced romaine lettuce Mandarin orange slices (chilled), fresh whole blueberries, sundried tomato slices, grape tomatoes slices in half, topped with Asiago cheese Caesar dressing (trader joes) Was super easy and definitely worth the effort!
