MINCE PIES! We are stuffed and full of festive cheer. Michelle, Jon and Caroline enjoyed making them, we enjoyed eating them! You should give them a go at home- here is the recipe: Michelle’s Mince Pies Ingredients 225g flour 140g butter 55g caster sugar 1 egg 1 pinch of salt, 1 jar of mince meat, icing sugar for dusting. Method: Mix the flour and salt. Rub in butter, do not over mix. Stir the sugar into the eggs, mix it lightly and add to the flour. Rest the pastry for an hour in the fridge or over night. Roll the pastry to about a millimeter thick and cut 12 circles and 12 stars Grease and flour a cupcake tin, Gently place the 12 circles into each of the slots Spoon the mince into each pastry circle. Top with the stars. Bake at 180 for 20 minutes or until golden brown. Oven vary so keep an eye on them.
